#ChorizoInsight, the new initiative of the Spanish Chorizo Consortium that brings together international prescribers in Salamanca

A tapas dinner, a visit to the Dehesa, or a chorizo tasting are some of the activities that will take place at #ChorizoInsight, the new initiative organized by the Spanish Chorizo Consortium, which invites several international influencers to get a firsthand experience of the Spanish Chorizo seal.
On May 3rd and 4th, the city of Salamanca will host meat industry professionals from France and Germany, who will have the opportunity to discover the cultural and gastronomic richness of the Golden City, as well as its historic buildings and corners. In addition, to deepen their knowledge of chorizo, the Consortium will organize a unique immersive chorizo tasting and pairing experience.
Michael Keller, a game meat sommelier and butcher who provides specialized training on the Consortium’s seal; Thomas Richter, a certified meat sommelier and winner of the Lebensmittel Praxis magazine award for the best meat counter in Germany; Ronny Paulusch, a meat sommelier and member of the Dry Ager Academy, specialized in providing training on premium agri-food products and collaborator of the Consortium in the training of the Augsburg Butchers’ School; and Quentin Senellon, responsible for practical training and external events at CEPROC, the leading training center for bakers, butchers, pastry chefs, cooks, pizza makers, and charcutiers in France, will participate in this initiative.
In addition, this visit will also be attended by the Market Analyst of the Spanish Commercial Office in Düsseldorf, Manuel Uzcanga Meinecke.
Representation in Salamanca
The Consortium has a significant presence in Salamanca thanks to its associated companies, Chacinerías Díaz and Cárnicas Iglesias, who will be responsible for showing the influencers the complete process of chorizo production and the values that the seal represents by visiting their facilities and the Dehesa.
This action is part of the collaboration with ICEX España Exportación e Inversiones with the aim of making Spanish chorizo increasingly recognized internationally.
